Kala (Liberian Fritters)
Kala is a great and mouth watering snack, similar to Nigerian puff-puff.
Ingredients
- salt, or to taste1 tbsp
- sugar1 cup
- warm water3–4 cup
- active dry yeast4 1/2 tsp
- all purpose flour6–7 cup
- vegetable oil, for deep frying
Quantities are auto-calculated from the original recipe as a guide. Items without numbers (e.g. “to taste”) are not changed.
Method 7 steps
Combine the salt, sugar, warm water, and yeast in a medium-size bowl. Set aside for about 5–7 minutes.
Add the flour and mix very well; if you have a mixer, use it.
Let the mixture rise for approximately 2 hours.
Pour the vegetable oil in a large saucepan until it reaches at least 5 cm deep—too little oil will result in flatter fritter. Heat over medium heat—a drop of batter should rise to the surface and start sizzling.
Use a spoon or your hands to drop dollops of batter into the hot oil. Fry for a few minutes until golden brown on one side. Turn the ball to the other side and fry until golden brown.
Use a large perforated spoon to remove the fritters and place them on paper towels to soak up excess oil.
If desired, roll the finished product in powdered sugar or table sugar.
