Ensalada Rusa (Uruguayan Potato Salad)
Ensalada Rusa, which translates into "Russian Salad" is a simple potato salad that is a staple in Uruguayan tables. It is served with "asado" in restaurants.

- potatoes, diced2
- peas, fresh1 cup
- carrots, diced2
- mayonnaise1/2–3/4 cup
- salt, to taste
- pepper, to taste
