Holiday Soda
This holiday soda differs from anything you will find in a can and is perfect for the holiday season. It derives from a Flavor Lab recipe. Make sure that you use a species of edible pine; some species are toxic.
Ingredients
- edible pine needles, 120 ml; preferably Douglas fir1/2 cup
- clementine orange peel, peel from 3 clementines; tangerines or similar easy-to-peel citrus may be substituted3
- white sugar, 240 ml1 cup
- water, 240 ml1 cup
- cinnamon sticks2 stick
- cloves4
- cardamom pods, 30 ml; whole pods2 tbsp
Quantities are auto-calculated from the original recipe as a guide. Items without numbers (e.g. “to taste”) are not changed.
Method 7 steps
Wash the pine needle branch and clementines.
Remove the pine needles from the branches and peel the clementines.
Mix the pine needles and clementine peels with the sugar in a container, and let this sit in the fridge for 24 hours. The sugar will extract the liquid from the citrus peels and produce a syrupy liquid.
Boil the cinnamon sticks, cloves, and cardamom pods in the water.
Pour the warm water with boiled spices into the container with pine needles and peels.
Mix the ingredients together and strain the mixture.
To make the finished soda, mix 1 volume of syrup with 5 volumes of carbonated water.
